100% Tempranillo

From the 8.5 hectare estate surrounding the winery, at an altitude of 647 meters, the best grapes are selected from the area of the vineyard with the best grape quality. This circumstance can change depending on the vintage, since the same estate has varied soils and slopes that mark differences in quality. For this vintage, a grid of 0.8 hectares was chosen in the southern part of the estate, with a marked north-south slope, from which approximately 2,750 kg of grapes were selected. The grapes were harvested by hand in 12 kg boxes on 8-10-2022.

The grapes are manually destemmed and placed in open French oak barrels of 500 liters, where the alcoholic fermentation takes place. Once the alcoholic fermentation is finished, the grapes are pressed using a manual press, obtaining a soft extraction of the wine. The wine is then placed in a 500-liter French oak bocoy where it undergoes malolactic fermentation.
