Tempranillo

Average age of 36 years with a yield limited to 6,200 kg/Ha. Average altitude of 515 m.

Harvested by hand. Once destemmed, the grapes ferment and macerate with their skins for 20 days in small capacity stainless steel vats (16,000 kg).

15 months in French and American oak barrels. 20% new barrels, 80% second use.
